PB&J Ice Cream Sundae #StackItUp

It's happened, I've finally outdone myself. I have been on such a roll lately with all these desserts. Seriously my family has been scratching their heads wondering what they've done to deserve such amazing treats. I'll keep them wondering for now, today I'm sharing my recipe for PB&J Ice Cream Sundaes! You heard me right. They are as delicious as they sound, I promise. And with such few ingredients, you can easily make this... right now.

So here is everything you will need to make an amazing, out of this world dessert. 

  • RITZ Fresh Stacks Ultimate Butter
  • Peter Pan Simply Ground Peanut Butter
  • Jelly - I used classic grape, but any flavor would be awesome!
  • Vanilla Ice Cream 

I found everything I needed at Walmart of course. I always find everything I need here. All the ingredients we picked up, we pick up on most regular shopping trips. But this time I was pretty excited to find the new RITZ Fresh Stacks Ultimate Butter. They are only available for a limited time, so if you see them make sure to grab a few boxes. The fresh stacks are THE BEST snack to have on hand, they make grabbing a quick snack for on the go, so easy. Oh and just a tip, keep an eye out for Peter Pan Simply Ground Peanut Butter. Seriously, it is probably the best peanut butter I've ever had. Once you've tried it, you will see why. 

Peter Pan Simply Ground Peanut Butter explains it best right there on the package: Creamy with a bit of crunch. It's not at all like crunchy peanut butter and definitely not like creamy peanut butter either. The bits of crunch add the perfect amount of texture and balance. 

So what do you do when you find the best peanut butter around? You find a way to turn it into a dessert of course! I mixed it into some whipped cream and came up with the most delicious combination ever created. Okay, that might be a little dramatic, but until you've tried it, how can you disagree?

Mixing the Peter Pan Simply Ground Peanut Butter and whipped cream is the only prep that you need to create this recipe.  I used the whole tub of whipped cream and added 2 tbsp of Peter Pan Simply Ground Peanut Butter. You will only use a heaping tbsp of the mixture for each cup of dessert, but you can always save the rest to enjoy at a later time. 

Step 1.  Place a tsp of jelly on the bottom of your glass or bowl.

Step 2. Add one RITZ Fresh Stacks Ultimate Butter cracker.

Step 3. Top with a scoop of Vanilla Ice Cream

Step 4. Add a heaping tbsp of he delicious Peter Pan Simply Ground Peanut Butter/Whipped Cream mix. 

Step 5. Drizzle more Jelly on top.

Step 6. Top with one last RITZ Ultimate Butter cracker. 

It is pretty common knowledge that RITZ crackers go well with Peanut Butter, but for this dessert RITZ Fresh Stacks Ultimate Butter crackers add the little bit of salt to help balance the sweetness of the Jelly. My favorite part of this recipe is the portions. It's not too much of anything. It's not too heavy, too sweet or too filling. The portions in this recipe are small, perfect for a little treat.

Sweet and Simple Valentine's Treat

Valentine's Day is just around the corner and as much as I wish it were about super romantic date nights and flowers and chocolates and all that, it's not. I have two daughters, so I have to share Valentine's Day with my girls. I'm okay with that, for now, Valentine's Day is a family affair.

Last year we had pancake hearts for breakfast and we've made pink cupcakes before, so this year we have are making a sweet and simple dessert. 

This is all you need and it's under $5. These wafer cookies are the BEST and I mean, who doesn't love some frosting with sprinkles. Yes! 

What my kids liked most about these is that they can make them on their own. You know how much kids love making their own desserts. This was fun for them and then they get to eat it.

My only problem was that I had to try and keep them from double dipping. In the future I will probably give them their own little dollop of frosting and let them double or triple dip away. I have to admit I was inspired by something similar I had seen on Pinterest, but they were dipped in chocolate. As good as everything is dipped in chocolate, Funfetti Vanilla flavored frosting sounded even better. 

So there you go, a super simple and sweet Valentine's Day treat for the whole family. 

Delicious (and easy) Holiday Dessert #SpreadOREOCheer

The moment December hits I start planning out which meals and goodies I will be making and where I will be taking them. I love pulling out favorite old family recipes and of course searching Pinterest for new ones too. Today I'm sharing the perfect Holiday dessert, something simple to make, simple to share and of course delicious. Recipes tend to call my name when they feature family favorites for ingredients, this one features the best cookies of all, OREO cookies. 

This is the cookie aisle, my favorite aisle, at our local Food 4 Less. My girls like to stand in this aisle and look at all of the cookie options, but it always comes down to the same. We always come home with OREO cookies.

For this recipe you will need:

  • 1 pack of OREO cookies (I used Double Stuff, you can use any variety)
  • 1 large box of Chocolate pudding. (mixed with Milk)
  • 1 pack of Cream Cheese
  • 1 tub of whipped cream
  • 1 tsp of sugar

The recipe instructions are very simple. Recipes that are simple are important for the holidays because time is precious and the holidays are busy. 

  • Follow the instructions on the box of pudding and mix it with the milk and set in the fridge to chill. The pudding should set within the time it takes to prepare the other layers. 
  • Place the OREO cookies in a food processor until it crumbs. Set aside.
  • Mix the cream cheese, whipped cream and sugar together until smooth. 
  • Next you can assemble your cups. Begin with a layer of OREO cookie crumbles, next add a layer of the cream cheese mixture, then add the pudding layer. Last, top with more whipped cream and anything else your heart desires. I used pretty snowflake sprinkles. 

This dessert is perfect for any holiday party. Both kids and adults will enjoy this mini trifle dessert because, well everyone loves OREO cookies. When I was a kid the big deal about OREO cookies was how you ate them. Did you take them apart before eating them? OR eat them whole? Did you lick the cream out first?
