Stay Warm with this Chicken Noodle Pozole

One of my favorite things about cooking for my family is challenging myself with coming up with something new and different. I am always trying to incorporate the traditional cooking techniques and styles that I learned from my mom and grandma with new ideas. But, the thing about a lot of traditional dishes is that they take a really long time to cook and I'm just always trying to find a shortcut. This is one of my favorites. If you have ever made traditional Pozole, then you know you get all of the flavor from cooking the meat for many hours. While shopping at Albertsons during their Stock Up Sale, I stocked up on Progresso Traditional Chicken Noodle Soup and decided to add some of my Latina flair to the traditional soup. 

For this recipe, the Progresso Traditional Chicken Noodle Soup really carries most of the flavor and the fun part is all of the toppings. 


  • 2 cans of Traditional Chicken Noodle soup
  • 1 large can of White Hominy
  • 1 Lime


  • Tortilla Strips
  • Shredded cabbage
  • Chopped cilantro
  • Avocado (cubed)
  • Queso Fresco
  • Lime (to flavor)


Step 1. Open and empty the contents of both cans of Progresso Traditional Chicken Noodle soup and the can of hominy into a large pot and set to simmer over medium-high heat. 

Step 2. Squeeze one lime into the pot and stir.

Step 3. Heat through until the hominy becomes slightly more tender (about 20-30 minutes) and serve. 

Look at that bite! The Chicken Noodle soup has so much flavor already, all the toppings that I've suggested are traditional toppings for Pozole and add a lot of complimentary textures. 

Always know that each recipe that I share with you is going to be easy, because honestly, I just don't have the time for very complex recipes.
