Easy Homemade Gnocchi

So, you know how every now and then you need a super quick snack without having to go to the store for some random ingredients? Is that just lazy me? I can't be the only one! Well, here is my recipe for Easy Homemade Gnocchi. Enjoy...

2 medium to large potatoes
1 egg
3/4 cup of flour
1 tsp of salt
Pepper to prefernce
Also, Oil or butter and garlic if you like (not shown)
Step 1: Fill a medium pot with water and set to boil.
Step 2: Microwave or bake your potatoes until tender. Peel the skin back and mash them up

Step 3: Scramble the egg in a medium bowl, then add the mashed potatoes, flour, salt and pepper.
Step 4: Mix all the ingredients together until it forms a dough the consistency of cookie dough.

Step 5: Take chunks of the dough and roll it out until you get long pieces about an inch thick. (kinda like making snakes out of play-doh!)

Step 6: Make 1-1 1/2 inch cuts, then press your fork gently into the dough to form grooves. 

Step 7: Take about 1/3 of your gnocchi and place it into the boiling water until it rises to the top. (about 7 minutes for all the gnocchi to come up)
Step 8: Put a few tablespoons of butter or Olive oil into a heated skillet, along with some minced garlic or red pepper flakes, and toss the gnocchi into the pan for 2-3 minutes on each side, or until you see some golden color to the gnocchi. Remove from butter, set aside, and begin the next batch.

Here is the finished gnocchi, sprinkled with a little Parmesan cheese. TADA!!!
