McCafe Bread Pudding #McCafeMyWay

Not only do I LOVE coffee, but I NEED coffee in my life. It doesn't matter how many hours I sleep, from the moment I wake up, I need coffee ASAP. Especially on school mornings, starting my coffee is one of the first things I do. Because I love my McCafé coffee so much I thought why not add it to one of my favorite desserts, bread pudding. 

This recipe is a variation of a very old family recipe. My husbands grandmother passed away just a few months ago and one of my favorite memories of her is when she showed me how to make her famous bread pudding. Her old school measuring style was a lot of measuring with her hands, so I had to watch very carefully and guestimate the actual measurements. 

This is what you'll need: 

Bread

Day old bread or slightly hardened - 1 loaf of french bread or 6 bolillo rolls torn apart

8 oz McCafé Coffee

6 Eggs

2 cups of milk

2 cups of sugar

1 cup of raisins

1 cup of crushed walnuts

1/4 cup of oil

2 tbsp of Vanilla

2 tbsp of Baking Soda

2 tsp of Cinnamon

This is my favorite kind of recipe, the kind where you just throw everything in one bowl and use your hands to mix. Don't try to use a spoon, trust me, you just need to get your hands dirty. 

Ready? Okay, here we go.

Step 1. Rip up all of the bread to fill a bowl. 

Step 2. Pour McCafé Coffee, Milk and Vanilla into the bowl and mix with your hands to make sure all of the bread is moist. 

Step 3. Add eggs, sugar, baking soda, cinnamon, oil and mix. 

Step 4. Add raisins and walnuts and once again, dig in and get your hands dirty.

Step 5. Empty contents of the bowl into a 13x9 baking dish. The mixture should fill the pan. 

Step 6. Use an egg yolk to spread over the top of the mixture.

Step 7. Bake at 350 degrees for 40 mins, check the center with a toothpick and if necessary bake for another 20 minutes or so. It is delicious when it is warm, but I like to let it set for a bit before cutting. The bread pudding should be thick, moist and delicious. 

My favorite way to eat this bread pudding is in the morning with my coffee. I took this photo early in the morning, after serving my McCafé coffee in my favorite mug. This right here, is my "Me-Time" before the rush of the morning. It's important to carve out a little time for yourself during your day. It is the time of day I look forward to the most. I use my "me-time" to enjoy my coffee, reflect on my crazy life and watch the morning news. I savor these moments because before you know it, the kids will wake up and occupy every minute and thought of my day. 

I just love the aroma and the flavor of McCafé flavor. To me, the flavor is strong and rich, but not overwhelming. There is such a difference between instant coffee and brewed coffee and I am just in love with my McCafé coffee pods. I prefer medium roast and take mine with a little sugar and creamer.

 This bread pudding recipe that I am sharing is close to my husband's grandmother's recipe, but not the same, I don't think it will ever be exactly the same. I absolutely love the hint of coffee flavor from the McCafé that I added, but she probably would have so many notes for me, I could just hear her now.   

Recently while shopping at Walmart I was lucky enough to find an in store demo and got to sample McCafé coffee, even though I am already a fan, I couldn't just pass up an extra cup of coffee. You know what puts me in the best mood? Bright colors and yummy snacks! Today I am sharing the best of both of those with a Gummy Candy Kabob, the perfect addition to mix in to your Strawberry SUPER Snack Pack Juicy Gels. How fun is this?! 

I loved making ribbons and swirls with sour strips and just had fun with all of the different colors and shapes.  The possibilities and combinations are endless. I could make these all day, in fact I think I will making these for my daughter's birthday next month.

Meet Toby! The Newest Member of the Family #NudgeThemBack

I would like to formally introduce you all to the newest member of our family, Toby. Toby came into our lives in October as an 8 week old puppy that my best friend found on her doorstep. She knew we were thinking of getting a new dog and asked if we were interested. Honestly, I wasn't interested. We knew we wanted a dog, but it would have to be the "right" dog for our family and we didn't know what that was. I told her I would watch him for a few days and if it didn't work out, I would help her try and find a home for it. Well, 6 months later, Toby is officially a member of our family. 

Our doggie history:

A few months before my husband and I got married he brought home a puppy that he found on the street. He named her Jessie and we loved her so much. She was with us during the loss of our son and provided the most comfort to us, she showed us unconditional love. When my oldest daughter was 6 months old, we lost Jessie. It was one of the most devastating times in our lives, we almost didn't understand why it hurt so much to lose her, but we knew it would be a long time before we could love another dog again. It has taken us 6 years to open up our heart to love a puppy again, and now we have Toby. 

When considering what kind of dog we wanted for our family, we knew that we wanted a puppy to grow up with my girls and be able to play with them outside. Toby is definitely an active playful puppy and keeps my girls on their toes. He loves to chase them, run along side them, and take their toys hostage and make them run for it. 

 If you are a dog owner then you know that every dog chooses his/her person as their favorite. Well Toby chose my daughter Lacey as his person. He is incredibly protective of both of my girls, but he loves Lacey. He looks to her, for her and sleeps at her feet every night.

Although in this case, Toby kind of chose us, we just hoped that he would be an adventurous dog. We needed a dog that would love to go on hikes with us, walks around the neighborhood, and go with us on our visits to the beach. My husband and I always say he's one lucky dog to fall into a family like ours. Toby isn't our pet, he is our family and we like to treat him as such. 

When planning for our family adventures, we always stop to pick up snacks for the day. While shopping at our local Walmart the other day, I picked up fruit and crackers for us and

(Recipe) Warm Cream Cheese Marshmallow Pastry #TasteTheSeason

For me, the best part of the holiday season is the gathering of family and friends and of course, the baking. The first step in Party Planning, is recipe planning and grocery list making. I love coming up with new ideas and recipes, but I always have to make sure to stay within budget. One of the ways I stay under budget is to buy products I'm familiar with and are already on my regular shopping list and build my recipe around them. Today I'm sharing a recipe for a Warm Cream Cheese- Marshmallow Pastry, oh yeah!
We do a lot of our grocery shopping at Walmart, not only for the convenience, but the prices are definitely budget friendly. We regularly buy and use Kraft products not just for baking, but for everyday use. I have always wanted to use puff pastry and on this shopping trip I found some in the freezer section right next to the cool whip.
For this recipe you will need:

Frozen Puff Pastry
Philadelphia Cream Cheese
Jet Puffed Marshmallows
Bakers Chocolate (Semi-Sweet)
Cool Whip
Kraft Caramel or Strawberries (optional)

Step 1: Preheat oven to 400 degrees. 
Thaw and roll out puff pastry (follow instructions on the box), cut into even amount of squares and separate half. Set aside half of the puff pastry for the tops.  
Step 2: Spread a tablespoon of Philadelphia Cream Cheese in the center, add a Jet Puffed Marshmallow and add a piece of Semi-Sweet Bakers Chocolate. 
Step 3: Top with the other half of the puff pastry and press down along the edges to close. 
Step 4: Bake according to directions on the puff pastry box. For me, it was 400 degrees for about 10 minutes. Let stand for about a minute, the warmer the better.
Step 5: While the pastries are baking, melt Semi-Sweet Bakers Chocolate in a double boiler for the drizzle.
Step 6: Top with Cool Whip, sliced strawberries (optional) and drizzle with chocolate!
Step 7: Enjoy! 
If you have never tried cream cheese and marshmallow together, you will not be sorry. Trust me, it is such a treat together, during the Summer, I use melted marshmallows and cream cheese mixed together for a fruit dip. On this trip I accidentally grabbed the Unsweetened Chocolate, so I skipped it for the baking and sweetened and melted it for the drizzle.



One of the ways I have started to make my grocery shopping easier is having a shopping list for my girls to use. When we get the ads in the mail, I let them look through them and cut out what they would like along with the items they know we use all the time and then glue them on their own shopping list.
