Meet Toby! The Newest Member of the Family #NudgeThemBack

I would like to formally introduce you all to the newest member of our family, Toby. Toby came into our lives in October as an 8 week old puppy that my best friend found on her doorstep. She knew we were thinking of getting a new dog and asked if we were interested. Honestly, I wasn't interested. We knew we wanted a dog, but it would have to be the "right" dog for our family and we didn't know what that was. I told her I would watch him for a few days and if it didn't work out, I would help her try and find a home for it. Well, 6 months later, Toby is officially a member of our family. 

Our doggie history:

A few months before my husband and I got married he brought home a puppy that he found on the street. He named her Jessie and we loved her so much. She was with us during the loss of our son and provided the most comfort to us, she showed us unconditional love. When my oldest daughter was 6 months old, we lost Jessie. It was one of the most devastating times in our lives, we almost didn't understand why it hurt so much to lose her, but we knew it would be a long time before we could love another dog again. It has taken us 6 years to open up our heart to love a puppy again, and now we have Toby. 

When considering what kind of dog we wanted for our family, we knew that we wanted a puppy to grow up with my girls and be able to play with them outside. Toby is definitely an active playful puppy and keeps my girls on their toes. He loves to chase them, run along side them, and take their toys hostage and make them run for it. 

 If you are a dog owner then you know that every dog chooses his/her person as their favorite. Well Toby chose my daughter Lacey as his person. He is incredibly protective of both of my girls, but he loves Lacey. He looks to her, for her and sleeps at her feet every night.

Although in this case, Toby kind of chose us, we just hoped that he would be an adventurous dog. We needed a dog that would love to go on hikes with us, walks around the neighborhood, and go with us on our visits to the beach. My husband and I always say he's one lucky dog to fall into a family like ours. Toby isn't our pet, he is our family and we like to treat him as such. 

When planning for our family adventures, we always stop to pick up snacks for the day. While shopping at our local Walmart the other day, I picked up fruit and crackers for us and

Fish Tacos with Creamy Chipotle Sauce #VivaLaMorena

When I was 11 years old I took a trip to mi abuelas hometown of Guanajuato, Mexico to visit mi gran abuelito before he passed away. That trip was life changing and I went through a major culture shock especially when my car broke down outside of a slaughter house and after seeing animals being sold in a marketplace, I left Mexico a changed young lady. Most practicing Catholics don't eat meat on Fridays during Lent, but I gave it up completely and didn't eat a single piece of meat for 6 years. I will always remember mi abuleas recipes that were specific for Lent, especially her tacos del horno and fried potato cakes. Now, I have my own traditional non-meat recipes and today I am sharing my favorite fried fish tacos with a creamy chipotle sauce with the help of La Morena

I am a new fan of La Morena, I love it's authentic ingredients, it is a Mexican food brand that lets you incorporate a true taste of Mexico into your own home cooking. Opening a can of La Morena chiles takes me and my kitchen back to mi abuealas home cooked meals that I miss so much. 

Do you like fish? I know a lot of people shy away from cooking fish at home, but not me, I love fish and especially fish tacos. Although I make them pretty often during the summer, I think I mostly love the versatility of them. Today I am sharing my recipe for the easy, but delicious Creamy La Morena Chipotle Sauce to top my fish tacos.

I went to my neighborhood Food 4 Less store to purchase all of my ingredients for my fish tacos.


  •  La Morena
  • 7oz Chipotle Peppers
  • 2 lbs Swai Fish fillets
  • 1 package Fish Fry 
  • (You can use any batter you desire but I use Louisiana style Fish Fry, It's spicy.)
  • 1 cabbage sliced (or cole slaw)
  • 2 cloves of Garlic
  • Corn Tortillas
  • 16 oz. Crema con sal (Sour cream)
  • Queso Fresco (crumbly cheese)
  • Salt and Pepper


  1. Heat skillet with oil and prepare to fry. Once fish is covered in batter, place in oil for 2-3 minutes per side. Remove from oil when lightly browned and set aside. 
  2. Open can of La Morena Chipotle in adobo sauce and empty into a food processor along with garlic cloves, a pinch of salt and pepper and a cup of crema (sour cream). Blend until creamy.
  3. Warm tortillas on a comal or in a microwave to soften. 
  4. Build your taco: a piece of fried fish, topped with shredded cabbage, creamy Chipotle sauce, and crumbles of queso fresco. 
  5. Enjoy! 

I also used La Morena sliced Jalapeños to create a creamy jalapeño sauce as another option, by using the same directions as the chipotle cream sauce.

I am a busy Mom and I am not shy to admit the cleanliness of my home is always last on my list. Let's Make Lunch Fun for Back To School! #MyGoodLife

I thought I had an extra day before the Back to School madness, but I was wrong. My girls start school TOMORROW! I am so glad I called to ask because, we would've been a day late. With my oldest daughter going into all day kindergarten, I am very excited to start packing lunches for her. I knew I wanted to do something fun and different and hopefully make the transition into kindergarten nice and easy. It's all about balance in our lunches, I love for my girls to drink in the goodness with NESTLÉ® JUICY JUICE® and to add a little surprise I thought it would be nice to serve up smiles with a snack size BUTTERFINGER® or NESTLE® CRUNCH®! So here are some of my fun lunch ideas! First of all, I wanted to write my daughter a note. She can't read much yet, so the notes are simple but special. I thought what a better way to surprise her than to wrap the note around her 


 box. (This way, I know she'll see it for sure!)

I also wanted to add variety. Not just a sandwich and chips. I took a cookie cutter to a slice of cheese and made fun shapes for her to look at before she eats them. Of course, a serving of fruit is a must! Luckily my daughter isn't very picky when it comes to lunches which means I have room to experiment! Stay tuned for more ideas in another post. 

I think it's a great idea to add a little treat like a snack size BUTTERFINGER® or NESTLE® CRUNCH®! I know when my girls are at home, I always give them a little sugary snack to help give them a little energy boost. This works for us, hopefully, it'll help with her teacher.
