Summer Afternoons at Grand Park in Downtown LA #CaciquePicnic

It's funny how the simplest things in life are the ones that the kids look forward to the most. I take my kids to fun places all the time, but all they really want to do is just go to the park, play and have a picnic. I get it, I remember wanting to do the same thing when I was a kid. There is something exciting about spreading out a blanket and sitting and eating on the ground, or in this case bright pink tables surrounded by tall buildings. 

When it came time to plan out our picnic, I wanted to do something different. I didn't want to just pack the same old sandwiches and I wanted to choose a fun location, something new to our family. That is why I chose Grand Park in Downtown LA. 

 I knew I wanted to bring warm food with us on our picnic and so I thought, why not make a Cheesy Chicken Bake. We love cheese in our family and I love that

has so many different cheeses to choose from. The Cheesy Chicken Bake is delicious, easy and perfect for a picnic, just stuff it, bake it, wrap it in foil and throw it in the picnic basket. Keep reading for the full breakdown. 

Ingredients:

Manchego (Sliced into spears)

Cacique

Queso Cotija

2 Cans of Crescent Roll Dough (yields 4)

Spinach (handful for each)

Shredded Chicken (about 1/2 cup for each)

Cooked Bacon (about 1 1/2 pieces for each)

Directions:

1. Roll out 1/2 of 1 can of dough to about 6 inches in diameter.

2. Spread a handful of Spinach leaves down the center of the dough.

3. Layer shredded chicken on top of the Spinach.

4. Place spears of

Cacique

Manchego across the chicken.

5. Lay half pieces of bacon across the Manchego.

6. Roll the ends of the dough over the center and pinch the ends closed. 

7. Sprinkle Cacique Queso Cotija over the top of dough and Bake in a 350 degree oven for 10 minutes or until browned all around. 

As soon as I pulled them out of the oven, I let them sit for a few minutes and then wrapped them in foil to help keep them warm. When we got to the park, I pulled them out and sliced them in half. They were still warm and the Manchego was perfectly melted. 

Grand Park is such a gorgeous part of Los Angeles. It is right in the middle of Downtown LA and although they hold a lot of fun free events all the time. On this Saturday Summer afternoon, it was quiet. We were the only family there having a picnic and my kids gobbled up their Cheesy Chicken Bake, packed with spinach, so fast. Of course, they had their heart set on visiting the playground.

There are a lot of reasons why I love living in LA. One of the reasons is that this beautiful park is less than 5 miles from my home and surrounded by history and culture and incredibly tall buildings. Even though I can see the skyline of Downtown LA from my bedroom window, the view is still breathtaking to me everytime. 

We watched the sun set over Downtown LA and drove around for an hour just looking at everything there is to see. I love being able to teach my girls how to appreciate everything around them. It is my favorite thing to do, to introduce them to new foods and show them the beauty of our city.
