Recipe: Zucchini Side Dish in Under 20 Minutes

Today I'm sharing an old family recipe with all of you. For the longest time I thought this was only our family recipe, but as time went on and the internet showed me differently, I saw others share their own family variations. As far as I know, this recipe was handed down to us from my Grandma Aurora and before that her mother, my great-grandmother, handed the recipe down to her. Of course, the recipe has evolved over time, but what I like most about this recipe is how fast and easy it is and that my girls eat tons of veggies when I make this for dinner. Which of course makes me feel like Super Mom!

Everything you need for this recipe was bought during a shopping trip to Albertsons. When I hear Stock Up Sale, I make sure to stop in and stock up on all my favorite kitchen staples, like Del Monte canned veggies. You can stock up too until 10/13. Here is what you need to make this delicious dish.

Ingredients:

1 Can of Del Monte Whole Kernel Corn

1 Can Del Monte of Diced Tomatoes

2 cups of Squash

(I used 1 small Green Zucchini, 1 small Yellow Squash, and 1 small Cousa Squash)

1 Tbsp of Chicken flavored bouillon

1 cup of Shredded Cheese (I used Colby Jack)

Salt and Pepper to taste 

Step-by-Step instructions

Step 1: 

Slice the zucchini and squash into 1/4 inch thin slices, set aside.

Step 2:

Empty contents of the can of corn and diced tomatoes into a pan, add the tbsp of chicken bouillon, salt and pepper and heat through on medium-high heat until you start to see bubbles. 

Step 3:

Lower the heat to medium-low. Pour in all of your zucchini and squash and stir them in until they are covered. 

Step 4:

Let simmer low for about 15 minutes or until the zucchini and squash are tender.

Step 5:

Top with shredded cheese when served.

This delicious dinner took all of 30 minutes from start to finish. For me, the key to a quick dinner is starting it all at the same time and using what you have on hand, like Del Monte cans of corn and tomatoes, I always have those on hand. I started the rice at the same time I started the zucchini and pan cooked some swai fillets while every thing else cooked.
