Back to School Recipe: One Pot Arroz con Pollo

Back to School season is here and I know your mind is just swirling with everything that is needed for Back to School; clothes, supplies, schedules and a million other things. All I'm trying to figure out is how to make it as easy as possible for myself. Thankfully we have places like Walmart for a one-stop shopping experience, where not only can I get all of the Back to School necessities, but I can get my grocery shopping done too!  

The way that I like to make meals easy for myself, is by using classic ingredients that I always have on hand and making one pot meals. Some of my favorite ingredients are one's that I have used my entire life, like Campbell Soup Company products. Are you ready to shop for delicious Campbell Soup Company products? One of my favorite recipes that my abuela used to make for me was arroz con pollo. Oh how I miss her famous arroz con pollo. When I was growing up, she knew it was my favorite and although there were many of us, she always said she made it just for me. Well, she made enough to feed a small army, so although that may not be true, I love that she made me feel like it was special just for me.

Here is my simple, recipe for a twist on the classic Arroz con Pollo.  


1 can Campbell's® Condensed Chicken Noodle Soup

1 can Swanson® Premium Chicken

1 jar Pace® Picante Sauce

1 cup of rice

2 tbsp oil

Shredded cheese (to top)

What I love about all of these ingredients is that they’re familiar and so easy to mix and match and come up with something new and delicious. I liked using Pace® Picante Sauce because of the traditional South Western flavors it adds to the dish. I love how easy Swanson® Premium Chicken is and of course, everyone knows the traditional flavor of Campbell's® Condensed Chicken Noodle Soup. All of these ingredients came together perfectly.


  1. Start with heating a skillet with oil. Once the oil is hot, add the rice and stir until it browns.  

  2. Once the rice has browned, add the can of Campbell's® Condensed Chicken Noodle Soup. Usually, an arroz con pollo recipe calls for just chicken broth. I liked this better, the Campbell's® Condensed Chicken Noodle Soup added so much more flavor and consistency to the dish. You will also need to add about a half a can of water to the rice. Stir, cover and keep on low-medium heat until the rice cooks. 

  3. Once the rice has almost finished cooking, shred the Swanson® Premium Chicken and add it to the rice. This is also when I added the Pace® Picante Sauce. I added about half the jar and gently folded it in.  

  4. Cover again and keep on a low heat for another 5 minutes or until everything is heated through.

  5. That's it! Serve with a topping of Pace®  Salsa and some shredded cheese and you've got a delicious and easy twist on the traditional Arroz con Pollo.
