Quick and Easy Pozole Rojo

The holidays are all about spending time together as a family and I don't know about you, but so much of our family time is spent in the kitchen. Some of our favorite traditions are decorating the house, baking cookies, and singing our favorite Christmas songs. My favorite part of the holidays though is when the weather starts to cool down and I can finally start to make those warm traditional dishes that warm up the house.

Growing up, my grandma never made pozole. It wasn't until I was married and my Mother-in-Law shared her recipe for pozole blanco with me that I realized how much I loved cooking pozole for my family. Now it's one of my favorite warm dishes to make. Pozole blanco is usually my go-to, but once I saw this super simple recipe from Knorr for Pozole Rojo, I knew I had to try it out.  

This Pozole Rojo recipe from Knorr is both delicious and simple and you can easily customize it with whatever veggies you have on hand. Knorr Bouillon is a kitchen staple, so you know you'll always have that ready too.

Pozole Rojo

Recipe Serves: 4          Preparation Time: 10 min            Cooking Time: 55 min

INGREDIENTS

  • 1 1/4 lbs. pork butt, cut into 3/4-inch cubes
  • 2 Tbsp. vegetable oil
  • 1 white onion, chopped
  • 2 cloves garlic, finely chopped
  • 1/2 tsp. dried oregano leaves, crushed
  • 1 can (14.5 oz.) diced tomatoes
  • 1 can (15 oz.) hominy, drained and rinsed
  • 1 cup water
  • 2 cubes Knorr® Tomato Bouillon with Chicken flavor Cube(s)

DIRECTIONS

Season pork with salt and pepper. Heat 1 tablespoon oil in a large, deep skillet over medium-high heat and brown pork. Remove and set aside.

Reduce heat to medium and heat remaining 1 tablespoon oil and cook onion about 4 minutes or until soft, stirring occasionally. Add garlic and oregano, and cook about 1 minute. Add pork and remaining ingredients. Bring to a boil. Reduce heat and simmer covered about 45 minutes or until pork is tender.

That's it! So simple and quick, all in under an hour! Serve with chopped avocado and lime wedges. Some people like to add crunch with shredded cabbage, sliced radishes or fresh tortilla strips. Enjoy! 

Tips: For a quicker meal: substitute cooked, shredded pork, chicken or beef for the pork cubes and stir into onions after they are softened. Add remaining ingredients and simmer 5 minutes or until heated through.
