Quick and Easy Breakfast with Minute Rice

Sing with me, "It's the most busiest time of the year..." There is so much going on right now, with wrapping up the end of the year projects, school shows, Christmas shopping, gift wrapping and parties. All I'm looking forward to is easy meals that won't take too much of what little time I have to spend with my family.  What is an easier way to save time than with Minute® Rice?  Although this is a sponsored post, I always give you my own opinion and the recipe that I created is mine to share with all of you. I bet you didn't even know that you can make all of these delicious meals with Minute® Rice. So now the question is, what will I make? 

This is one of my favorite recipes for saving time in the morning. I usually use leftover rice from the night before, but Minute® Rice works perfectly!  Here is what you will need:

  • 1 cup of White Minute® Rice cooked
  • 3 eggs
  • SPAM diced
  • Pinch of Garlic Salt and Pepper to taste

First, you'll need to cook your rice. With Minute® Rice, that only takes about 5 minutes. I love the ease of Minute® Rice, you really can't mess it up. It is 1 cup of boiling water to 1 cup of Minute® Rice for one serving. It's that easy. 

Next, cook the diced spam in a skillet with a tsp of olive oil, until brown. Once the spam is browned and your Minute® Rice is cooked, add the rice to the skillet and mix together for a few minutes to heat. 

Last, add 3 scrambled eggs to the skillet with Minute® Rice and spam and scramble together until the egg is fluffed up and cooked. Add a pinch of Garlic Salt and pepper to flavor. 

Ta-da! Easy as 1-2-3 and done in less than 10 minutes. My kids LOVE this meal. I don't know why, but they're always very excited for eggs and rice for breakfast. There is some history behind this meal, my Grandma used to make this dish with her leftover Mexican rice when I was a kid. Of course, I've added my own twist to it, but the memory of who made it first will always be there.
